Taco Tuesday
Tacos are seemingly easy and cheap to prepare as a meal, whether it be for two people or for ten people. I had been craving Mexican food for a while, and when it came down to the daily question of "what's for dinner?", I knew right away that I was going to have tacos. It was about time to go to the grocery store, but I did have a pound of hamburger meat in the freezer and some flour tortilla's that needed to be eaten. The only thing that I was lacking was taco seasoning, so I looked in my spice cabinet and voila! I had everything I needed to make an at-home taco seasoning.
What you need:
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano (or italian seasoning if you are out of oregano!)
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon black pepper
Mix all of those ingredients in a small bowl and set aside.
Next, you want to prepare your vegetables to cook with your meat for that added flavor and crunch.
1 green bell pepper, sliced and diced
2 cloves garlic, minced
1/2 yellow onion, chopped
After these ingredients are prepared, set them aside. Now you will need to cook your meat. Brown the hamburger in a pan with some olive oil, season with salt and pepper, and then drain and rinse to wash away the excess fat.
Once you have your meat in the colander set aside, you will need to saute' your vegetables. Add the bell pepper, onion, and garlic to your pan with some olive oil. Salt and pepper to taste.
Next, you will add your meat in with the vegetables and let cook for about 5 minutes. Grab your taco seasoning mix that you set aside earlier, and add 1 1/2 cups of water into the bowl. Mix it with a whisk to ensure that there are no clumps of spice.
Add the seasoning to your meat and vegetable mix. Simmer until all of the water mixture has been soaked into the meat, stirring occasionally.
Once the meat and vegetables are done, brown your flour tortilla shells (or you can stick them in the microwave for a few seconds). After they are soft, lay one flat shell on a plate and add meat to the middle (leave enough room on the sides for when you roll it up later.
You can put whatever you want in your taco, but if you are slacking on the typical taco fixins', you can just add sour cream and cheese, like I did (because its what I had in my refrigerator)
Once you have added all of your fixins', take the bottom of the shell and fold it in half way.
Next, take the right side of the shell and fold it over..
..then fold the left side and voila! There you have your taco.
It is quick, cheap, and easy! Enjoy! :)
