Somethin' Sweet - White Chocolate Macadamia Nut Cookies

The whole reason that I created this blog was to share my love for food with others. Cookies, in particular, are kind of becoming my signature dessert/snack. I have been known to make hundreds of chocolate chip cookies in my day, but this weekend, I was craving something different. Something that I had never made before. White Chocolate Macadamia Nut cookies. Hashtag YUM.

Now, i'm not usually a huge white chocolate fan (being that white chocolate isn't even chocolate at all) and its pretty sweet by itself, but mixed into a cookie with some nuts for texture evens it out, and makes a delicious treat. 

I didn't use an actual recipe for these cookies, but it is pretty close to the one that I use to make the chocolate chip cookie batter.

What you need:

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup white sugar
1 cup brown sugar
1 1/2 teaspoons vanilla extract
2 large eggs
1 bag white chocolate chips
1 10oz. bag sliced macadamia nuts

Preheat your oven to 375 degrees.

Combine flour, baking soda, and salt in a medium sized bowl. Set aside. 


Next, combine your butter, white sugar, brown sugar, and vanilla extract in a bigger bowl and mix until creamy. (This is when you can start tasting the dough... my favorite part!) 








Beat in one egg at a time.




Now, start adding the flour mixture, little bits at a time to ensure that all of the flour gets mixed in evenly. Do this until your dough thickens. 



Now its time for the fun part. Fold in your white chocolate chips and macadamia nuts. Make sure that the chips & nuts are mixed in evenly.



(This is the part where you can start eating the dough by spoonfuls....)

Now, place your dough by tablespoon on a lightly greased cookie sheet. 



Bake for 9 minutes on 375. This makes the cookie crispy on the outside, but gooey on the inside. Perfecto!


 Once your cookies have cooled for about 2 minutes, place them on a wire rack to finish the cooling process. Enjoy! 



This recipe yields about 60 cookies (depending on how much dough you eat!)
