A Southern Staple - Chicken Salad

I ended up asking my mom what she puts in her chicken salad when she makes it, and also did a Google search to find some recipes. I picked out different things that I liked and thought would make good chicken salad, and put together my own recipe, (which by the way, was soooo good). 

What you need:

2 chicken breasts, cooked and shredded
1/4 yellow onion, diced
1 stalk celery, sliced and diced (you can also mince the leaves for added flavor)
1 egg, boiled and chopped
2 tablespoons dill pickle relish
1/3 cup mayonnaise
1/3 cup miracle whip
salt and pepper to taste
1 tablespoon dijon (or other spicy) mustard

First, boil your egg. Cook your chicken breasts and pick them apart until all of the chicken is off the the bones and shredded. 


Chop up your celery, celery leaves, onion and egg, and toss together until mixed well.




Next, add your dill pickle relish.


Add your Dijon mustard, mayonnaise, miracle whip and salt and pepper, and mix well. 


 Voila! Chicken salad! 




You can choose what kind of bread you put it on, but I was craving a good, hearty bread so I bought a bakery fresh loaf of sourdough. I decided to grill the bread on my grill pan for that extra flavor from the char. This took my sandwich from a 5 to a 10! 


To grill the sourdough bread:

Slice into 1 inch thick pieces.


Soften a teaspoon (per slice) of butter, and spread on the outside sides of the bread. Place your bread (buttered side down) in your grill pan, and cook for about 5-7 minutes, or until you see the char marks starting to show.




Once the bread is charred, place on a plate, and add your homemade chicken salad directly on the bread. (You can put some lettuce and tomato on your sandwich if you wish!).



Everyone knows that if you are going to eat a chicken salad sandwich, you have to have potato chips to go along with it! I chose the low-fat kettle cooked plain chips, and they turned out to be a great accoutrement!



Slice your sandwich in half, and enjoy! You now have a homemade chicken salad sandwich on grilled sourdough bread.


Put the south, in your mouth! YUM! :)
