Low Country Boil
Truly another Southern Staple, the Low Country Boil, Frogmore or Beaufort Stew (as I like to call it), is a hearty meal that includes two proteins, a starch, and a vegetable, all in one. Plus, it tastes delicious!
Beaufort Stew
1 pack Kielbasa Sausage, sliced thick
1/2 pound Shrimp
6 baby red potatoes
2 corn cobs, halved
1 box Zatarain's Crab Boil
1 1/2 tablespoons lemon juice
1 teaspoon cayenne pepper
Salt and Pepper to taste
1/2 tablespoon butter
Cocktail Sauce
Get a big pot, and fill up with water a little more than half way. Add your crab boil, butter, cayenne pepper, salt and pepper, and lemon juice, and bring to a rolling boil.
You want to add your ingredients in order from what takes the longest amount of time to cook, to the shortest amount of time. Start by adding your potatoes, and boil for 10 minutes.
Next, add your Kielbasa Sausage. Boil this for about 7-8 minutes.
Add your corn, and cook for about 3-4 minutes.
Your shrimp only takes about 2 minutes to cook, so this will be the last step. By now, your Low Country Boil should look like this:
Once the shrimp have turned pink, take the pot off of the burner, and set aside for about 5 minutes, to let the flavors sink into the ingredients in the pot. Grab your colander, and pour your stew out, draining all of the liquid.
Plate it, grab your cocktail sauce and voila! Beaufort Stew for two! Pair it with a piece of Texas Toast and go to town :) You will not be disappointed!
