Healthy Alternative - Zucchini Fries
I decided that I was going to make zucchini fries, which is a healthy alternative to french fries. I had never make these before, so I was excited to try something new.
What you need:
3/4 cup bread crumbs
3 tablespoons Italian seasoning
1/4 cup grated Parmesan cheese
1/4 teaspoon seasoned salt
1/4 teaspoon black pepper
2 zucchini
1/4 cup butter, melted
Preheat your oven to 425 degrees. Spray your baking sheet lightly with some cooking spray, and set aside.
Cut your zucchini in half lengthwise and slice into 2 inch pieces.
Combine the breadcrumbs, Italian seasoning, Parmesan cheese, seasoned salt and pepper in a small bowl. Stir with a whisk until clumps of cheese are gone.
Melt your butter in a separate bowl. Dip the zucchini in the butter, then roll in the bread crumb mixture, and shake the excess crumbs off. Lay on your baking sheet.
Bake the zucchini fries for 15 minutes or until the breading has browned on the outside.
These zucchini fries were delicious! And perfectly paired with the burgers that I made. Enjoy!
