White Cake + Chocolate Icing
So, it seems that word has spread that I am a maker of all things that are good... i.e. cakes and what not. Last week, a co-worker of mine, Maia, asked me if I would be interested in baking a cake for a friend's birthday bash that she was throwing at her house. She didn't want anything too crazy, just your simple white cake with chocolate icing, and she wanted it to be homemade. Well hey! That's right up my alley! After a few mishaps with the original cake (don't try to bake after you've been drinking!) I put together a cake with some small piping and "Happy Birthday Julia" written on it with some yellow icing. Wasn't too shabby in my opinion!
What you need:
White Cake:
1 1/2 sticks unsalted butter, softened
1 1/2 cups sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
6 large egg whites (3/4 cup)
3/4 cup milk
2 teaspoons vanilla extract
Preheat your oven to 350 degrees. Grease & flour 2 9" round cake pans and set aside.
Beat butter and sugar together for 5 minutes. This will be your butter mixture.
Next, stir together flour, baking powder and salt in a separate bowl. This will be your flour mixture.
Combine egg whites, milk, and vanilla extract and whisk until frothy. This will be your milk mixture.
You should now have 3 separate bowls with different mixed ingredients.
Add 1/3 of the flour mixture to the butter mixture and then add half of the milk mixture. Alternate adding the milk mixture and flour mixture, ending with the flour mixture.
Mix until creamy.
Your batter is now ready to be poured into your prepared pans. Pour half in one pan, and half in the other. Smooth top of batter with a spatula and bake for 30 minutes. Cool on a wire rack.
While your cakes are cooling, you can prepare the chocolate icing.
Chocolate Icing
What you need:
1/2 cup butter
2/3 cups Hershey's Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract
Melt your butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spread consistency. (Add small amounts of additional milk to get smooth consistency if needed). Stir in vanilla.
You are now ready to ice your cake!
Place one cake on a cardboard cake circle, and ice the top and sides of it. Place the 2nd cake on top of that, and ice the sides and then top, smoothing with an icing spatula.
To pipe icing:
Mix 2 cups of powdered sugar into remaining icing to make thicker. Grab your feather bag and fill with new icing mixture. Place a star tip with a coupler on the end of the bag and pipe all around the edges of the cake. Take your writing icing and create your message for the top of the cake. Voila! You now have the perfect birthday cake :) Enjoy!
