Greek Lemon Potatoes

I strive to not always eat the same things. I usually buy a lot of the same ingredients, but try to use them in different ways so that my meals do not become monotonous. A couple weeks ago, I wanted something to pair with my left-over Pork Souvlaki Shishkabobs, so I decided to try Greek Lemon Potatoes. They were super easy, and I already had all of the ingredients in my kitchen! 
What you need:

 5 baby red potatoes, halved
1/2 cup olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
1 lemon, juiced (or 2 tablespoons lemon juice)
1/2 cup chicken broth (or 1/2 cup chicken bouillon water)
Salt & Pepper to taste

Preheat your oven to 400 degrees. 

Slice your potatoes and rinse them to ensure cleanliness. 


Next, mix your olive oil, oregano, garlic powder, lemon juice, and chicken broth together in a medium sized mixing bowl. 


Place your potatoes in the bowl and stir around, until heavily coated. Next, grease a baking sheet lightly with olive oil and place your potatoes on the sheet. Drizzle remaining marinade over potatoes and salt & pepper them to your liking.


Bake your potatoes for about an hour. Turn them halfway to ensure that they do not stick to the pan and that they cook evenly. 


Once they are done, pair them with the rest of your meal for a healthy & delicious side! Enjoy! :)
