Mouth Watering Chocolate Mousse + Graham Cracker Crumble

Everyone loves chocolate. I mean, its a known fact. If you are not a chocolate lover, then you obviously have never had chocolate mousse made by the hands of the infamous cookie-dough Jo. I'm kidding (not really) but this is a very simple, very light and delicious dessert, good for a sweet treat after any meal. Or, if you're like me, its good anytime, but that's besides the point.  I wanted to switch up the normal routine of baking a cake or cookies. Ah! Chocolate mousse. Pair that with some homemade whipped cream and a graham crackle crumble for some texture + added sweetness and you've got it!

What you need:

Chocolate Mousse:

1 small container of heavy whipping cream
6 oz. of semi-sweet chocolate chips
1 teaspoon vanilla
1 tablespoon milk

Melt your chocolate chips (either in a double boiler or the microwave, in this case I used the microwave) until they are creamy and have the consistency of peanut butter. Mix in your milk with a spatula.

Take your heavy whipping cream, add your vanilla, and whip with a whisk until fluffy. Add your chocolate to your whipped cream and stir together well.

 Refrigerate for 30 minutes.

While your mousse is setting, you can prepare your crumble.

Graham Cracker Crumble

3 graham crackers, crumbled
1/4 cup brown sugar
1/8 teaspoon ground cinnamon
3 tablespoons melted butter
1 teaspoon vanilla
2 tablespoons white sugar
1 dash salt

Preheat your oven to 350 degrees. Butter a cookie sheet, completely.

Smash your graham crackers until they are of crumble-size. Mix your graham crackers, brown sugar and cinnamon in a medium sized bowl. Combine your melted butter and vanilla, and stir into the graham cracker mixture. Spread evenly on your buttered pan. Sprinkle with sugar and salt and bake for 15 minutes.

Once your crumble is done, it should come out all in one piece. Take a spatula and break up into a crumble. This will be the topping for your mousse.

While your crumble is cooling, you can prepare your whipped cream.

Homemade Whipped Cream
1 small container heavy whipping cream
2 tablespoons vanilla
1 tablespoon bourbon

Combine ingredients into a medium sized bow. Whip with a whisk until fluffy.

You are now ready to construct your dessert.

Take your mousse and put it in a dessert bowl. Add your crumble and top with a dollop of your homemade whipped cream. Voila! You now have an easy, delicious dessert! This is definitely a bowl-licking treat! Enjoy! :)
