Vanilla Cupcakes + Maple Buttercream Icing
There have been lots of birthdays lately! Which means lots of baking! June 5th was my boss, Angel's 32nd birthday. I decided that I was going to make cupcakes for the office in celebration of her birthday. I knew that Maple Buttercream icing was her favorite (and when she makes it, its delicious), so I wanted to make that for the cupcakes, but I couldn't exactly ask her for her recipe, being that it was for her birthday. I came across a few recipes and combined them to make my own recipe for the icing. It was pretty tasty!
Vanilla Cupcakes
What you need:
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1 cup milk
1 teaspoon vanilla
Preheat your oven to 375 degrees and line your cupcake tin with liners.
Cream your butter and sugar together until it forms a light and fluffy mixture. Beat in eggs, one at a time.
Mix together your flour, baking powder and salt in a separate bowl. Add it to your mixture, alternating with milk. Add your vanilla and mix well.
Divide your batter evenly among cups and bake for 18 minutes.
Once they are done baking, let them cool in the pan for 5 minutes, then remove them and place them on a wire rack to finish cooling completely.
While your cupcakes are cooling, you can whip up your Maple Buttercream icing. Its fast, easy & delicious!
Maple Buttercream Icing
What you need:
1 cup butter, softened
2 3/4 cup powdered sugar
2 tablespoons brown sugar
2 tablespoons maple syrup
1 tablespoon ground cinnamon
Place your softened butter in a large bowl. Beat with a mixer until whipped.
Scrape the sides of your bowl with a spatula. Sift your powdered sugar into the bowl and beat with a mixer until evenly distributed into the butter.
Scrape the sides of the bowl with your spatula and add the brown sugar and maple syrup. If you want your icing to have a stronger maple flavor, add 1 teaspoon of syrup additional at a time until you get the flavor you prefer. Mix well.
Add your cinnamon.
You should now be ready to ice your cupcakes. I placed mine in a feather bag and piped it on with a circular tip, but you can ice them however you prefer! I then sprinkled some extra cinnamon on top. Enjoy! & Happy Birthday Angel! :)
