Coffee Cup Cake + Easy Chocolate Ganache

I was watching Chopped on the Food Network (surprise, surprise) and this particular dessert won the final round. It was super easy, super fast, and looked super delicious. Vanilla sponge cake made in the microwave. Wwwhhhatttt? Yep. Microwave cake. gross. SIKE! It was absolutely delicious, and chances are, you will already have everything you need to make it in your pantry at home.

Coffee Mug Sponge Cake

What you need:

5 1/2 tablespoons flour
4 tablespoons sugar
1/8 teaspoon baking powder
1 egg
5 tablespoons milk
1 tablespoon canola oil
dash of salt
1/2 tablespoon vanilla extract

In a small bowl, combine all of your ingredients, and stir with a whisk until just combined. Take 2 coffee mugs, spray with them non-stick spray, and divide the batter between the mugs. Your mug should be filled up about 1/3 of the way. Bake one cake at a time to ensure even cooking. Microwave for 1 1/2 minutes. You can watch your cake rise to the top of the mug. Bake your other cake, and let both of them cool. 


While your cakes are cooling, make your ganache to drizzle over top. (This is for all of you chocolate lovers out there).

Chocolate Ganache

What you need:

1/2 cup semi-sweet chocolate chips
1 tablespoon butter
1/4 cup milk
1 teaspoon vanilla extract
1 tablespoon powdered sugar

Melt your chocolate chips and butter in the microwave until about half melted (give or take 20 seconds). Add your milk, and melt the rest of the way. Make sure to check it between intervals of cooking to ensure it doesn't boil (this causes it to be thick). Stir it with a whisk, and add in your vanilla and powdered sugar. Voila! Easy chocolate ganache for an easy microwave cake.



Your cake and your ganache are ready to be married into a dessert that is oh-so-wonderful. Take a spoon and drizzle the ganache on top of your cooled cake, and go to town. This is the perfect portion for a dessert and will leave you satisfied. Plus, its quick and easy! This is definitely something that I will be making again in the near future! Maybe next time I'll whip up some cream with some strawberries....? Stay tuned!
