Mountain Peach Cobbler

Anyone who knows me, knows that my first love in the kitchen is to bake. I recently returned from a mountain trip with girlfriends, and while we were there, we purchased fresh grown peaches from a roadside stand. To say that these were the sweetest, juiciest peaches I have ever eaten would be an understatement! We ended up purchasing a few pounds of peaches so it was decided that I should make peach cobbler! 

Peach Cobbler

What you need:

1/2 cup unsalted butter
1 tblsp baking powder
1 cup all-purpose flour
2 cups sugar, divided in half
1 tsp. salt
1 cup milk
5 cups fresh peach slices
1 tsp. nutmeg
1 tsp. ground cinnamon
1 tblsp. lemon juice

Preheat oven to 375.
Peel and slice peaches.

Melt your butter in a 13" x 9" baking dish.


Combine flour, 1 cup sugar, baking powder and salt.


Add milk, stirring until dry ingredients are moistened. 



Pour batter over buttered dish. Do not stir.


Bring remaining 1 cup sugar, peach slices, and lemon juice to a slight simmer over high heat for 2 minutes, stirring constantly. 



Pour hot peaches over batter (do not stir).


Sprinkle with cinnamon and nutmeg.


Bake at 375 for 40 to 45 minutes or until brown.


Serve warm & enjoy!
