Flank Steak Pinwheel + Garlic Smashed Red Potatoes
This recipe is definitely a pallet pleaser - meaning that you will be thoroughly satisfied once you try it. Shout out to Adam for finding & tweaking this recipe, giving credit where credit is due!
Flank Steak Pinwheel
What you need:
1 flank steak
1 bell pepper, color of your choice, julienned
Peppered goat cheese (spreadable)
1 cup baby spinach
2 tblsp. original pesto
Salt & pepper to taste
Cooking twine
2 tblsp butter
Preheat oven to 250 degrees. Pound flank steak with meat mallet until flattened. Sprinkle both sides with salt and pepper and lay flat on a baking sheet. Cover generously one side with peppered goat cheese. Next, take your bell pepper and spread evenly over surface. Add baby spinach leaves. From one end, roll your flattened flank steak + stuffings to the other end and tie with twine. Cover steak roll with pesto.
Melt butter in a skillet over medium high eat, and brown your steak wheel on all sides. Put in the oven for approximately 15 minutes for medium temperature. Let rest.
Remove the twine and slice your pinwheel from one end to the other.
Garlic Smashed Red Potatoes
What you need:
1/2 lb. red potatoes
1/2 cup sour cream
2 tblsp. butter
3 cloves of garlic, minced
Salt & pepper to taste
1 tblsp. dried oregano
2 tsp. garlic powder
Boil potatoes until soft and drain. Add sour cream and butter and mash. Add garlic and remainder of seasonings and mash until smooth. Enjoy!
