Paella (pie-aye-uhh)
First off, I want to say thank you to Mrs. Kim Arnold for this amazing recipe! It all started a number of years ago when I used to house sit for the Arnold's when they would go out of town. I would come and stay and watch their two pups, Bonham and Coachy. Mrs. Kim knew that her famous Paella dish was one of my favorites, so she would always make it and stash it in the fridge for me so I would have something to munch on while crashing at their house! So, thank you so much for sharing this recipe with me!!
For those of you who love a quick and easy meal, this is definitely a dish I recommend for you! The entire thing takes about an hour, from preparation to finish! It is a fun twist on your day-to-day eats, and there is always some left over for lunch the next day!
Paella
What you need:
1 onion, diced
1 pack of smoked sausage, sliced thin
1 cup of white rice
1 can stewed tomatoes (do not drain)
1 lb. medium frozen (or fresh) shrimp, peeled and deveined
1 can chicken broth
1 tablespoon cayenne pepper
2 tablespoons turmeric (may need to add a little more as you go on for taste)
1 tablespoon olive oil
1 tablespoon garlic powder (more to taste)
salt + pepper to taste
In a medium sized skillet, saute the diced onion in olive oil.
Next, add your smoked sausage to your onion and cook until browned.
Add the stewed tomatoes and chicken broth and bring to a boil on medium heat.
Once the mixture is simmering, add your turmeric, garlic powder, cayenne pepper, and salt and pepper and mix well.
Turn your heat down to medium and add your 1 cup of white rice. Cover and let simmer for ~20 minutes, stirring often.
Once your rice is almost cooked, add your shrimp and cook uncovered for ~5 minutes.
Mix well and voila! You now have a delicious meal in under an hour! Not too spicy and very filling, this dish is a great go-to meal that incorporates all of the essentials for a hearty meal!
