A Cherry Pie Fit for a Bride
Never in all of my years of living had I heard of having a wedding pie instead of a wedding cake. Since I started my blog, I have had multiple requests to bake things for other people. A friend approached me about making a pie for her and her new husband to cut on their wedding day. Of course I said yes! I love making pies! She told me that she wanted a cherry pie with a lattice crust with two little hearts on it signifying their special day. I went to work!
What you need:
1 egg white, beaten
2 tablespoons of white sugar
1 teaspoon nutmeg
2 20oz. cans Comstock Country Cherry Pie Filling
1 box Pillsbury pie crusts, room temperature
1/3 cup milk
Preheat your oven to 425 degrees.
Prepare your pie dish by lightly spraying it with non-stick spray.
Next, take 1 of your crusts and remove it from the wrapping. Place the pie crust in your pie dish, flattening it so that it covers the entire dish with no air bubbles.
Cut away the excess dough from around the edges. (Save this dough, you will need it later!)
Take a fork and press into the edges, ensuring the the crust will cook evenly and there are no air bubbles.
Brush some of your beaten egg white onto the pie crust. This makes it crispy.
Next, take your 2 cans of Comstock Country Cherry Pie filling and put them into your prepared pie dish. Add your milk and nutmeg at this time and mix well, but be careful not to rip your dough on the bottom of your pie.
Now you are ready to make the top crust for your pie. Take your 2nd pie crust dough and lay it flat on your counter.
With a knife, cut evenly-sized strips. This will be your lattice crust.
Weave your strips of dough on top of your pie starting with the short pieces on the edges first, and the longer ones in the middle across the pie to ensure even coverage. Take your fork and once again, go around the edges of the pie to make sure that there are no air bubbles and that your crust is pressed together firmly to ensure even cooking. Cut off the excess edges of the strips with your knife.
Brush your crust with your remaining beaten egg whites. This makes for a light, crispy crust. Sprinkle your crust with your white sugar for added sweetness :)
Next, take all of your excess dough that you cut off from the edge of the pie and roll it into a ball. Flatten it with your rolling pin.
Take your knife and cut your shapes out of this excess dough. For this pie, Paige wanted 2 hearts on the top of your pie, but you may cut out whatever shapes you'd like. On other pies, I have cut letters into the dough, Christmas decorations, etc. The possibilities are endless.
Place your shapes on your pie where you want it to stay. Brush with egg whites.
Your pie is now ready to go on the oven! Place it in the oven in the center of the rack on 425 degrees for 15 minutes. Once 15 minutes is up, turn down your oven to 375 and wrap the edge of the pie with tin foil so that the edge does not burn. Bake for another 30 minutes.
Once your crust has browned and your filling is bubbling, you are done! Voila! You've just made a homemade cherry pie!
I delivered the pie to the venue the morning of the wedding, and it looked so pretty displayed with all of the other pies for the guests to enjoy!
